Great late harvest wines are some of the most age-worthy and collectible wines in the world. The best Sauternes, Tokaji and Beerenauslese can age for decades, taking on a richness and complexity that is truly astounding. Dolce is part of this family. As we have watched various vintages of Dolce age over the years in our cellar, we have become convinced that it is important to hold some wine back for a library program. We call it the Dolce Cave Collection.
As each vintage is bottled, a small percentage is placed into the Cave Collection, for careful cellaring and extended age. After the current vintage sells out, it eventually becomes available through the Cave Collection, along with the other library vintages.
Dolce combine a beautiful concentration of tropical fruit with apricot and honey notes so unique to botrytised wines. The sweetness and intensity of flavors is balanced both by vanilla and toast from time aging in French oak, and a distinctive brightness created by appropriate levels of acidity. Every vintage of Dolce is rich and intense, coupled with a wonderfully clean finish. As these wines age, they tend to acquire more mineral and creme brulee notes, offering an incredible array of aromas, flavors, and a mouth-watering texture.
The Dolce Cave Collection is packaged in 750ml bottles - three to a case. As with our current-vintage packaging, the Dolce Cave Collection is presented in the familiar, cream-colored laminated cases. Currently, the 1997 vintage is available, as well as a special vertical pack containing one bottle each of the 1995, 1996 and 1997 vintages. All wines are extremely limited.
